Truly the "filet mignon" of salmon, with a texture so silky and buttery it tingles the lips with its melt-a-way richness. A perfect, unsliced, 1 lb. chef's cut filet, to serve in paper thin slices or traditional 1" squares. Serves 5 to 6.
